Who is behind Brasa?

Brasa is owned by William Cazara, who is from Rio Grande do Sul, the southern Brazilian state where gaúcho churrasco is part of everyday life. In that part of Brazil, churrasco is how families and friends get together: a fire, a long table and meat carved as it comes off the skewer.

The menu and the service at Brasa follow that tradition. There is no complicated sauce and no show for its own sake. The aim is simple: bring good meat to the table at the right moment and let guests eat at their own pace.

What makes the food Brazilian?

Three things set a Brazilian restaurant apart from other grills.

  • Fire. The meat is cooked on skewers over open fire, so the outside is browned and the inside stays juicy.
  • Coarse salt. Brazilian churrasco is seasoned with coarse salt and little else, which lets the flavour of the cut speak for itself.
  • The cuts. Picanha, cupim and bananinha are everyday cuts in Brazil and still unfamiliar to many guests in Vietnam. Trying them is half the fun.

The way the meat is served is Brazilian too. In a rodízio, passadores bring the skewers to your table and carve each slice for you, so there is no menu to choose from and no waiting for a main course.

Four cuts to start with

You will see more than a dozen cuts during dinner. If you want to know where to begin:

  • Picanha is the classic. A cap of fat over tender beef, carved thin.
  • Cupim is a richly marbled cut from the beef hump, best in small slices.
  • Bananinha is a strip of rib meat with a deep, beefy flavour.
  • Filé com alho is beef cooked with garlic, fragrant without covering the taste of the meat.

See all 15 on our Brasa cuts page, or read our guide to the cuts before your visit.

The dining room

Our dining room in An Khánh has brick walls, warm lighting and a Brazilian flag at the door. The tables suit couples, families and groups, and the passadores come to each one. It is a relaxed place to spend an evening rather than a quick stop.
